Cookies anyone?

We like cookies...a lot!
One of our favorite things to do together is enjoy cookies and milk before bed (not every night, but if the kids had their way it would be). When Jackson was a baby and Alyssa only about two, Jared and Hunter made up a code for cookies and milk so that the little ones wouldn't know what they were talking about. That code was "vegetables and water". This was their tradition before it became a family one. Of course the kids have caught on and now everyone wants vegetables and water! I love these funny people!

Our favorite cookie recipe...
1 1/3c. margarine
1c. brown sugar
1c. sugar
Cream these together until very light in color and fluffy. Add in...
2 eggs, 1 at a time
2 tsp. vanilla extract
Beat for 2-3 minutes, it will get very smooth. Add in...
1 tsp. salt
1 tsp. baking soda
Take 1c. oats and put them in a blender or food processor until it makes a kind of chunky flour, add that to the dough with...
2c. flour
You might need to add more flour, I usually do. Add just a 1/4-1/2c. at a time until it is just slightly sticky. I think I add about 1 more cup of flour by the time I am done. Add in a bag of chocolate chips, stir then drop by spoonfuls onto a cookie sheet. 350 for 8-9 minutes. Take them out when they still look a little under done and they will stay soft and yummy for a few days.
